Traditional Irish Barmbrack

INGREDIENTS

Dark brown sugar30g
Cold black tea120ml
Milk (cold fresh)30ml
Salt5.4g
Egg15g
Saf-instant® Gold Instant Dry Yeast6g
Butter30g
Mixed dried fruits (sultan, raisin, cherry, mixed peel)180g
Cinnamon powder1g
Mixed spice3g

PREPARE THE DOUGH

  1. Place all the ingredients into the mixer except for the mixed dried fruits.
  2. Mix the ingredients for 6 – 8 minutes.
  3. Add in the mixed dried fruits and mix for 2 minutes to spread the fruits evenly.
  4. Place the dough into a bowl, cover and let it rest for 10 minutes at room temperature.

SHAPING

  1. Divide the dough into 2 pieces at approximately 360g each.
  2. Place each dough into a loaf tin and sprinkle with brown sugar.
  3. Cover the loaf tin and let it rest for 2 hours in a warm temperature.

BAKING

  1. Preheat oven at 160˚C.
  2. Bake for 35 minutes at 160˚C.
  3. Let it cool before serving.
